This is absolutely yummy. I usually make 4 times the quantity, that's enough for lunch on the weekends and during the week. By the way l use the jars of chilli and ginger, not the powdered stuff.
1 tab oil, 1 large onion chopped, 3 gloves garlic crushed, 1 teas grated fresh ginger, 3 bacon rashers chopped, 1/ 2 teas chilli , 810 gr can tomatoes, 1 tab tomato paste, 1 small chicken stock cube crushed, 1 c water, 1/ 3 c red wine.
Heat oil in saucepan, add onion, garlic, ginger and bacon, stir over medium heat for 3 minutes or until bacon is cooked. Stir in chilli, can of tomatoes, paste, stock cube, water and wine. Bring to boil, reduce heat, simmer for 5 mins. Process in food processor in batches until well combined. Return to pot and reheat before serving.
